Crispy Orange Beef with Broccoli


Steak: Using flank steak is fine, but more expensive than chuck steak.

Corn Starch

Sauce: 1/2 cup – 1 cup Orange Marmalade

1 T garlic

2 T white vinegar

1 T Ginger

2 T Soy Sauce

1/2 cup OJ

Other: 2 heads of broccoli

Instructions for Frying the Steak: Cut the steak against the grain in small strips (this make is more tender and juicy on a traditionally tough cut of meat).  Coat evenly in corn starch (this is what makes the beef crispy), and place them in the oil separately.  Never put in too much at a time so the oil doesn’t get too cold.  Fry them evenly and set aside.

Wisk the sauce ingredients together and put in a sauce pan to reduce.  Put the chopped broccoli in after the sauce has gotten thick, cook for about 5 minutes after you evenly coat it.  Put the beef in with the broccoli and sauce (don’t cook it for too long – more than a minute – or your beef won’t be crispy anymore!).  Combine with rice and that’s it!

Tip: you can put aside a few pieces of beef for beef fried rice.
