Greek Shrimp Scampi


3/4 cup evoo

4 cloves garlic – sliced

1 lb medium – large shrimp, raw

Zest of 1 lemon

1 sprig of oregano, chopped

1 handful of chopped parsley

1 cup pitted calamata olives,, chopped (not too much! the dish can get really salty if you have too many)

Red pepper flakes

1/2 cup white wine

1 lb linguine (or any other pasta)

Instructions: Heat 3/4 of a cup of evoo on low, put in 4 cloves of sliced garlic and cook until golden brown, remove and set aside the cloves.

Boil the water and cook the pasta. When it’s done, don’t drain the water completely, leave some for cooking.

Add the shrimp to the garlic infused evoo, and let them get pink.  Zest the lemon into the pan, add oregano, parsley and the olives.  Stir and add salt and red pepper flakes for heat.  Add the wine, and reduce. 

Add the pasta and 1 cup of the starchy cooking water and cook for a little bit.
