Tortilla Casserole


4-6 corn tortillas

1 cup chopped onion

1 cup green pepper

1.5 T garlic

1 cup chopped mushrooms

1 lb ground turkey/beef

2 cups plain yogurt

1 (15 oz) can tomatoes

3 T fine flour

2 T chili seasoning

1 (15 oz) can artichoke hearts in water, drained, chopped

1.5 cups shredded cheddar cheese

1/2 cup crushed tortilla chips

1/2 cup chicken broth

Instructions: Preheat oven to 350. 

Place tortillas in a pie plate with chicken broth and let them soak, set aside.

Saute onions, peppers, garlic and mushrooms until slightly browned.  Add turkey/beef and cook until meat is done.  Add remaining ingredients (except cheese and tortilla chips).  Stir thoroughly and bring to a boil.  Reduce heat and simmer for 5 minutes.

Place the tortillas in the bottom of a prepared baking dish, tearing to fit.  Layer half of mixture, and half cheese, repeat. Top with crushed tortilla chips.  Bake for 30 minutes.
