Bite Size Caprese Salad

Ingredients:

1 cup of packed basil leaves (about 25 leaves)

1 clove garlic (don’t use more than that)

The zest and juice of one lemon

S+P

evoo

Bocunchini (bite sized mozzarella, or you can cut up regular motz)

Grape tomatoes

Instructions:

Put basil, garlic, lemon zest and juice, S+P into a food processor and stream in evoo.  Put in a serving dish.  Cut up grape tomatoes and motz and stir.

Option: you can put this over pasta for a dinner
