Spaghetti Meatballs w/ Dipping Sauce

Ingredients for Pesto:

Handful of pine nuts

1 cup basil

1 c parsley

A couple handfuls of parmesan

2 cloves garlic

Meatball Ingredients:

2 lbs meat

1 egg

2 handfuls of bread crumbs


1/2 of the pesto

Cooked spaghetti

Instructions:  Make the pesto, and cook the spaghetti after breaking it into pretty small pieces to just before al dente.  Combine the meatball ingredients and pasta and brush with evoo.  Cook.

Sauce Ingredients:

1 chopped onion

2 cloves garlic

1 grated carrot

Beef stock

Tomato sauce

 1/2 of the pesto

Sauce Instructions: cook the onion in evoo until translucent, add garlic, carrot, S+P, beef stock, tomato sauce.  Heat through.  Add pesto at the very end.

Start boiling water for pasta, and preheat the over to 425.  Toast a handful of pine nuts and set aside.
