Bacon Wrapped Chicken

Ingredients:

1/2 cup pecans, toasted and chopped

4 chicken breasts

Blue Cheese crumbles (or goat cheese)

2 Scallions

Bacon

Wax paper

Toothpicks

Instructions:

Preheat oven to 375.  Toast the pecans and set aside.  Chop the scallions and set aside. 

Butterfly the chicken breasts, pound them out and S+P them.  Fill them with the mixture of cheese, pecans, onions, and roll and wrap them with bacon.  Secure with toothpicks. 

Sear them on both sides in a skillet and transfer to the oven to finish cooking.
