Ginger Roasted Salmon

This recipe is amazing. If you like salmon, or need more omega 3s, this is a great way to switch it up!


4 6 oz center cut boneless salmon fillets, skin on

1 T seasoned rice vinegar

2 t grated fresh ginger

2 t honey

2 t evoo

1/4 an oranges’ zest

coarse salt and freshly ground black pepper


Preheat the oven to 425. Line a baking sheet with a rack and spray with cooking spray. Place the salmon, skin side down, on the rack. In a small bowl, whisk together the vinegar, ginger, honey and oil until well combined.

Pour 1 t of the mixture over each fillet, season with S+P. Cook the salmon for about 15-18 minutes.

Transfer to serving plates and drizzle each with the additional mixture. Serve immediately.
