Italian BBQ Chicken

Today we’re having some friends over for dinner, and I like to put out a good meal from time to time, so I’ve decided on Italian BBQ Chicken.  It’s really hearty with all the right flavors and if you pick the right sides, it really is a feast.  I got this recipe from Rachel Ray’s show.

Ingredients:

4 pieces of leg and thigh attached (or bone-in skin-on breasts)

Grill Seasoning

Poultry Seasoning

1/2 lb pancetta (or non-smoked bacon for budgetary purposes)

2 stems rosemary

1 red onion

2 cloves garlic

1 T worstechire

1/4 cup balsamic vinegar

1 T brown sugar

1 cup tomato sauce (I’ve also used 1/2 can of chopped tomatoes if you like it chunky)

Instructions:

Preheat oven to 400 degrees.  Take the pieces of chicken and season them with grill seasoning and poultry seasoning.  Brown them up in a pan with evoo . When brown on both sides, put in the oven to finish cooking . 

In the same pan, chop up the pancetta or bacon and brown it.  Drain most of the fat.

Add the rosemary, onion and garlic and cook until the onions sweat out. 

Then add the worstechire, balsamic vinegar, brown sugar, stock, and tomatoes.  Keep cooking them to thicken the BBQ sauce. 

When the chicken is done, put it on a platter for serving and pour the BBQ sauce over it.  Top with torn basil (a must).
