Green Beans with Bacon

Ingredients:
1 pound fresh green beans, ends snipped off and discarded, extra long beans, cut in half if you want
2-3 slices of bacon
1/4 cup chopped walnuts (optional but awesome)
Black pepper
1 Tbsp lemon juice or cider or red wine vinegar

Instructions:
1 boil water and toss in beans for 5 minutes or until ready to eat. Drain and set aside.
2 While the water is heating up cook the bacon. Keep a T of the fat for tossing in the beans after cooking.
3 Sauté the beans and chopped bacon with walnuts until browned, 1-2 minutes.
4. Put the beans and bacon into a large serving bowl and sprinkle with lemon juice or vinegar and serve.

Yield: Serves 4 as a side dish.

Bacon & Blue Cheese Salad

Ingredients:
6 ounces bacon
3/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 teaspoons Dijon mustard
Salt and pepper
4 large eggs, hard boiled (optional)
12 ounces mixed lettuce/spinach
1 1/2 cups croutons
3 ounces blue cheese or gorgonzola, crumbled

Instructions:
In a medium skillet, cook the bacon over medium-high heat until crisp, about 7 minutes. Make the dressing in the serving bowl of your choice and use a T of the bacon fat. Add the lettuce, blue cheese, croutons and the bacon. Top with the cut eggs.
