Butter Roasted Carrots

2 cups chopped, quartered carrots
1 T butter, melted
1 t EVOO
1/4 t each Salt and Pepper

Preheat oven to 425.

Combine the butter, oil and S+P. Pour over carrots and coat. Lay on a baking sheet in a single layer and roast until done, about 15 minutes.
